healthy (kind of) treat


Okay, okay... so I realize that when you put both chocolate chips and marshmallows on something it is typically not thought of as a healthy snack. BUT... I do feel like the apple and peanut butter components totally outweigh the chocolate chips and marshmallows.

This is the "healthy" snack idea that I almost used to replace my Dear Diary post from earlier this week. I'm glad I didn't... but this little snack idea was still too yummy not to share. And I'm pretty confident that even the pickiest little eaters would go for this mid-day snack. I mean... who can resist marshmallows?!?

It's super simple... All you need is an apple, some peanut butter, some granola (I used Cascadian Farm's dark chocolate almond granola), some mini chocolate chips (regular size chips will work fine too), and some marshmallows. The marshmallows aren't pictured above because that was a last-minute brilliant addition:)

Cut your apple into horizontal slices, and be sure to core out the center. Then take your first flat slice and slather some peanut butter on there.

Then sprinkle on some granola.

Then be sure to add lots of chocolate chips... you know, to balance out the healthiness of the peanut butter.

I mean, why not? Go ahead and throw on some marshmallows for good measure.

Then add another slice of apple and repeat above steps. You could top it with another slice of apple and call it done. A little apple sandwich, if you will. That would probably be perfect for a little one. But you see... this snack was for me... and I'm as grown up as they come... so I prefer the double decker apple sandwich, thankyouverymuch.

And there you have it... an almost healthy snack. It was delicious, in case you were wondering.

I totally stole this idea right off of pinterest. There are some brilliant people out there, I tell ya.

Your right Julia, the peanut butter and apples TOTALLY cancel out the marshmallows and chocolate chips!! Looks delish!

Yum...but the sad thing is I don't have an apple corer...maybe you should just bring me some? Food always tastes better when someone else makes it anyway :)
